The ACF Big Apple Chapter Making Strides in the Food Service Community




The American Culinary Federation (ACF) Big Apple Chapter is a professional Chefs' association chapter based in New York City. With more than 17,500 members country-wide, the ACF works to support, promote, and improve the standard of excellence in the culinary profession. 

​Tri-State Marketing is a proud supporter of the ACF, working with them to put together events that will both continue culinary education and provide an outlet to the latest and greatest food service trends.

Last year, culinary professionals, students and enthusiasts came together for the “Why Is It Waste?” event held in the Holy Apostle Soup Kitchen in New York City. Attendees learned about food waste and sustainability from some of the best and brightest in the business.

Robert Walljasper, Buddy Gillespie, Robert McCormick and Chef Felipe St. Martin were some of the big names in attendance to discuss menu development, and ways to re-purpose waste through stock, compost and more. The team from Rational was also in attendance cooking up some delicious dishes using the SelfCookingCenter. 




This year, we teamed up with the ACF to give enthusiasts and students a chance to learn from the best in the business about sustainability at Fossil Farms. Fossil Farms is a family operated farm providing the country with the highest quality farm-raised game and meats, with options ranging from Alligators to Wagyu beef!


Participants toured the entirety of the farm, ending the tour with a farm-to-table dinner at the Fossil Farms kitchen prepared by Rational Chefs.


Partnering with the ACF Big Apple Chapter has helped educate, inform and inspire our chefs, partners and employees. We are always looking for ways to transform and educate the food service industry, and are honored to be able to stand beside the ACF to create long-lasting bonds and events for our supporters!
